Togen Authentic Red Clay Susuri-Chawan (Gaiwan)
Very fine clay and delicate texture like silk. It is made of high-grade clay. Togen made teaware and his brother dug and obtained this clay.
Beautiful and Elegat shape. First class clay and beautiful shape.
It bring a joy just watching it.
This is designed as Susuri-Chawan. You can put green tea leaves into the cup then put hot water and drink tea from the cup directly. (The method is called Susuri-cha) This way is seen in a senchado tea ceremony in Japan. However, you can use it daily as well.
And this cup can be used as a Gaiwan to brew tea as well. We tested holding it in hand like a Gaiwan and checked water flow from the cup.
You can also use as standard tea cup.
About Susuri-cha
Susuri-Cha means in English sipping tea. Using a cup with a lid, drink thick and rich green tea liquid from the cup.
(Occasion)
Susuri-cha is seen in tea ceremonies. Also, it is seen at special occasions to entertain guests with high-grade green tea. It is not a daily brewing method.
(Tea leaves)
High-grade green tea (meaning it contains lots of Umami (Amino-acid)) are used. Spring tea picked early in the season or gyokuro is appropriate.
(How to brew/drink)
Put green tea leaves directly in the cup (3-4g). It is rather many leaves for one, but this is the way to enjoy the thick and rich taste of green tea.
Water temperature for the 1st brew is low, 50 degrees Celsius. About 40-50ml should be put in the cup. Wait 1~2 minutes. Most of the water is absorbed by the tea leaves. Sip the green tea liquid from the cup.
The lid is used to prevent the tea leaves from coming down. (Do not take out the lid, just slide it to make an opening to let tea liquid for you to drink. It is the same way to drink tea from a Chinese Gaiwan)
For sencond brew, higher temperature of water can be used. And no need to wait.
For third brew, you can adjust as you like.
